However you think about it, the wine route is an intellectual adventure involving all the senses.
Born as a product of the earth, wine has such an ‘intimate’ bond with its territory of origin to preserve its organoleptic and sensory characteristics and properties.
And it is precisely this relationship with the territory that, like art or architecture, makes wine an expression, a historical and cultural identity. Hence, wine is both pure territory and the heritage and excellence of the territory itself.
For this reason, in our wine list, we wanted to represent Sicily as three Valleys into which the territory was divided since the Muslim era: the western one, Val di Mazara, the north-eastern part of Sicily, Val Démone, and the hinterland of south-eastern Sicily, Val di Noto.
Because of their uniqueness, we dedicated a separate paragraph to Etna and the Islands. The menu is finished off by a small, but significant, selection of national wines and sparklings.
